Today's Dinner (10-17-07)
Quinoa/Bison Stuffed Peppers. I won't post the recipe (at least here) but here's what was in it. Diced sweet onion and red pepper (very fine) 1 lb ground bison, 1 cup inca red quinoa, 1 can petite diced tomatoes, tomato paste, garlic powder, salt and pepper.
We cooked the ingredients together then cut several whole red peppers length wise and cleaned them out. We then stuffed the peppers with the mixture.
We then placed the stuffed peppers on a cookie tin and baked@ 375 degrees for 50 minutes.
It was served with some B&M brand sugar-free baked beans (sweetened with Splenda) and a leafy green salad topped with sliced white onions and some fat free italian dressing. It was AWESOME! :) Mmmmm.

2 Jenny-O turkey hotdogs on 100% whole wheat bread smeared with some spicy brown mustard, sugar free ketchup and sweet relish (sweetened with Splenda)

A day off...At Home-
Breakfast - 2 slices of 100% whole wheat toast topped with some natural pear butter 2 scrambled eggs and 2 Brown N' Serve turkey sausages cooked in coconut oil 2 10oz cups of coffee with a little vanilla soy milk and Sweet-N-Low --------------------------------------
First Snack - 1 Dove dark chocolate morsel ---------------------------------------
Lunch -Firehouse Sub. 8" Turkey on Whole Wheat ----------------------------------------
Second Snack- 1 oz dried banana chips -----------------------------------------
Dinner- 2 chipolte chicken sausages topped with some hot sauce 1 serving brown rice with soy sauce 1 leafy green salad with sliced onions and organic french dressing ------------------------------------------
Final Snack- 1 Soy Dream ice cream bar

Gotta work on a Satuday..At Home-
Breakfast - 2 slices of 100% whole wheat toast topped with some natural pear butter 1 Starbuck's 16oz non-fat latte with sugar free vanilla syrup --------------------------------------
At Work-
First Snack - 1 Dove dark chocolate morsel Cape Cod reduced fat potato chips (100 calorie snack pack) ---------------------------------------
Lunch -Sliced turkey sandwhich on 100% whole wheat potato bread with a little canola mayo and spicy brown mustard 1 lowfat cheddar cheese snack bar ----------------------------------------
Second Snack- 1 no sugar added fruit smoothie (just strawberries, bananas and ice) -----------------------------------------
Back Home-
Third Snack- 1 serving freeze dried strawberries 1 oz dry roasted peanuts ------------------------------------------
Dinner- We had dinner out at a BBQ joint. I had a 6oz BBQ sliced turkey dinner. It came with a baked potato, cole slaw, baked beans, 2 slices of italian bread and a side garden salad. I sent back the baked beans and 1 slice of italian bread (I ain't perfect - LOL). I also used A-1 sauce on the potato and a very small amount of spicy BBQ sauce on the turkey. Overall I think I did very well. ------------------------------------------

Lunch -Baked whole wheat spaghetti and mariana sauce topped with a slice of lowfat cheddar cheese 2 servings chunk pineapple in its own juice ----------------------------------------
Second Snack- 1 oz dry roasted pistachios 1 Dove dark chocolate morsel -----------------------------------------
Dinner- Tater tots and pan fried chicken breast strips 1 leafy green salad with reduced fat real bacon bits and some fat free italian dressing ------------------------------------------

A day of with my lovely wife onour 4 year wedding anniversary :) At a neighborhood restaurant- Breakfast - 3 eggs omelet with american cheese with a side of 3 tomato slices and 100% whole wheat bread with a little strawberry preserves 2 10oz cups of coffee with Sweet-N-Lo --------------------------------------
Back Home-
First Snack - 1 oz Newman's Own spelt pretzels ---------------------------------------
Lunch -2 slices 100% whole wheat toast with 1 serving natural pear butter 1 oz lite potato chips (made with olestra) ----------------------------------------
Second Snack- 1 Dove dark chocolate morsel -----------------------------------------
Dinner- Stir fry veggies in chili infused macadamia nut oil (portobello mushrooms, white onions, red bell peppers, white bell peppers, summer squash and zucchini) 1 filet of red pepper & walnut crusted talipia (fish) panned fried in coconut & macadamia nut oil Home made tarter sauce ------------------------------------------
Final Snack- Kozy Shack brand sugar free Apple Pie al a Mode Natrurally flavored dairy dessert (pudding) Pretty much YOAD friendly - 70 calorie snack cup Milk, Water, Food starch, Apples, Inulin, Natural flavors, Corn starch, Salt, Splenda, Cinnamon, Malic acid, Carrageenan and Annatto Not too too bad..and yummy :)

Lunch -3 oz sliced turkey breast with hot sauce 1 leafy green salad with sliced yellow onions, reduced fat bacon bits and low cal dressing ----------------------------------------
Second Snack- 1 oz VitaSpelt spelt pretzels -----------------------------------------
