Today's Dinner (10-17-07)

Quinoa/Bison Stuffed Peppers.


I won't post the recipe (at least here) but here's
what was in it. Diced sweet onion and red pepper (very fine) 1 lb ground bison, 1 cup inca red quinoa, 1 can petite diced tomatoes, tomato paste, garlic powder, salt and pepper.

We cooked the ingredients together then cut several whole red peppers length wise and cleaned them out. We then stuffed the peppers with the mixture.

We then placed the stuffed peppers on a cookie tin and baked@ 375 degrees for 50 minutes.

It was served with some B&M brand sugar-free baked beans (sweetened with Splenda) and a leafy green salad topped with sliced white onions and some fat free italian dressing.

It was AWESOME! :) Mmmmm.
